The History of Truffles:

There are two stories about the origin of chocolate truffles, and they both involve famous French bakers. We don’t really know which one is valid. They both believed that the creation looked like a wild mushroom, so that’s why it was named a “truffle.”

On Christmas Day in 1895, Louis Dufour was trying something new for Christmas treats. He rolled balls of chocolate ganache, dipped them in chocolate and then into cocoa powder. In 1902, Antoine DuFour immigrated to England and brought his family’s truffle recipe with him when he opened a chocolate shop.

In the 1920’s Auguste Escoffier created a truffle by mistake when he accidentally poured hot cream into a bowl of chocolate chunks. This turned into ganache, which he let harden and then rolled into balls and then into cocoa powder.

The earliest known recipe for chocolate truffles was in W.O. Rigby’s 1920’s cookbook: Rigby’s Reliable Candy Teacher.

The popularity of truffles spread, and now you can find different varieties of chocolate truffles all over the world.
